Stir fried Kale and Leeks

Annette Gibbons demonstrated the art of the stir fry.

4 fresh leeks, washed
2 tablespoons of sunflower oil
A handful of Kale
2 inch chunk of peeled root ginger

Slice the ginger very thinly on a mandolin. Watch your fingers!
Heat the oil in the wok or large frying pan.
Throw in the ginger and sliced leeks, stir fry over a medium heat until start to wilt.
Slice the Kale roughly and add to pan.
Stir fry until all vegetables are softened but do NOT overcook.
Season if necessary, plate and serve.
